The summer coolness of Malaga in four dishes

The Mediterranean diet is well-known aroud the world, and Malaga’s gastronomy represents well this healthy way of eating. Here you will find recipes perfect for summer with real fresh products. Our use of vegetables, tomatoes, fruits, fish, extra virgin olive oil... and of course, the fish on the beach... all that has already made prestigious chefs , such as Jamie Oliver or Gordon Ramsay, fall in love with our gastronomy.

Here you have four typical suggestions, great to be tasted in Malaga during the summer.

Porra antequerana

It is a variant of salmorejo, something like a creamier gazpacho. All these are adaptations of a single way of understanding the cold Andalusian cuisine, especially suitable for the summer and where tomatoes are the protagonists. Tomato, pepper, garlic, oil, bread and salt are the ingredients of the dough. Egg, tuna and a last generous amount of the best oil in the world are the perfect garnish. Delicious!

Pipirrana

Again tomato as a thread. Now in a standard salad format with onion, pepper and a fresh dressing of oil and vinegar. It is usually accompanied with pieces of octopus or other exquisiteness of the Costa del Sol.

Sardines on the beach

Some gastronomical experiences are part of our memories and even of our personality. Grilling sardines on the beach with the espeto technique is one of the stalwarts of the Malaga culture. Sardines are fished on our shores, and in boats with sand and embers the fish are roasted nailed in reeds. Cook on both sides... and they’re ready to make you hallucinate.

Ajoblanco

Here come stronger emotions. Soup, as white as the snow and cold, very cold. Some garlic (yes, we like garlic), but not much. Despite its name (White Garlic), almond is the main ingredient. To finish, it is accompanied with grapes but if we don’t have any, we can also put pieces of apple or melon. Try it and you won’t regret it!
